Snacks, perfect to accompany a pre-dinner drink, include artisan sourdough with bone marrow butter; smoked spiced beef savoury tart; wagyu bresaola; or burrata with pink peppercorn oil and black flake salt.

Seafood lovers can indulge in oysters (natural, champagne vinaigrette, wagyu kilpatrick or cucumber ice - salmon roe, lemon balm and yuzu); caviar or a seafood platter for two.

Entrees include woodfired beets (goat curd, hummus & black garlic puree); yellowfin tuna crudo (avo wasabi, buttermilk & green oil): steak tartare (yolk, horseradish, sesame crackers); beef tataki with ponzu and king prawns with chilli and mandarin.

From the selection of Large Plates (which come with a complimentary classic side dish) there's the likes of market fish with smoked salmon roe, miso butter and pickled kohlrabi; swordfish steak with baby water cress, parsnip and charred baby leek; truffle mushroom spaghetti; or whole live lobster with lemon butter dressing, finger lime and 2 side dishes.

The comprehensive steak menu is a meat-lover's dream, with over 14 steaks which are sourced from the farms of Queensland to the acclaimed cattle paddocks of Japan. The 'from the grill' section includes eye fillet, scotch fillet, 600g rib or dry aged sirloin on the bone or T-Bone MB4+; and a wagyu selection offers a choice of wagyu flank, sirloin; rump cap or flat iron Australian wagyu; eye fillet, strip loin or rib cap A5 Japanese wagyu MB12+; and wagyu tomahawk MB5+.

All steaks come with a choice of sauce (beef jus, chimichurri, mushroom, peppercorn or bearnaise) and a complimentary classic side (kipfler potatoes, green leaf salad or green beans) whilst extra R& R sides include bone marrow mash (recommended), mixed tomatoes with basil and stracciatella, creamed spinach or mac and cheese.

Delicious desserts include Rum Baba cake, Tonka Bean creme brulee and coconut panna cotta, otherwise finish with a selection of one, two or three cheeses served with lavosh, muscatels and quince. Can't decide what to order? Then Rich & Rare has a choice of two delectable banquets -the Drover's Delight or Wave & Wagyu.
