The primary cooking method at Flaming & Co is woodfire, using locally sourced iron bark wood. This traditional approach infuses the restaurant's dishes with a unique smoky flavour that enhances your culinary experience.

Must-try dishes at Flaming & Co include their signature large plates, such as the succulent Whole Smoked Duck from Hawkesbury, NSW. The duck is aged and smoked for around 12 days, then the duck breast is grilled to medium rare while the legs are cooked through to medium well.

Why not indulge with the Duck Banquet* (available for lunch and dinner) including snacks, starters and share sides - think salmon belly croquettes,  grilled tiger prawns, and assorted skewers like wagyu flank, lamb short loin and Fremantle octopus. *Pre-order is preferred.

The other stand-out on the menu is their signature Cote de Boeuf, featuring pure bred Black Angus beef from Darling Downs, QLD, aged for around 40 days. The careful ageing process locks in the meat's freshness and tenderness. Infused with the essence of charcoal grilling, the beef's aroma tantalises your palate. Indulge in a harmonious symphony of flavours as three distinct types of peppercorns are combined within the rich, velvety red wine jus. This infusion adds a delightful spicy kick and layers of warmth to complement the succulence of the beef. The interplay of mild and robust spiciness creates a sensory experience that lingers.
